Along the Andes mountain range is the farm of Hacienda La Papaya. At over 2000 meters above sea level, at the top of the farm, Juan Peña harvests Geisha cherries, benefiting from the diurnal temperature range from this unique microclimate. The cherries are depulped and dried under different levels of UV protection, a practice Juan developed from cultivating roses prior to growing coffee.
